Job Summary
The Catering Captain is responsible for coordinating catering staff schedules to ensure all functions are delivered, served, and cleared in a timely manner. Working under the supervision of the Catering Director, the successful candidate will prepare and serve food at scheduled functions and may be required to operate a company vehicle to deliver food and beverages to event sites.
Key Responsibilities
- Determine workload requirements based on catering orders.
- Coordinate with function group leaders to discuss setup arrangements, address changes, and resolve operational issues.
- Interact with customers to provide excellent service and resolve complaints.
- Demonstrate comprehensive knowledge of all menu items.
- Provide clear work instructions and expectations to catering staff.
- Assist in room setups according to client specifications.
- Assemble and transport food and supplies to scheduled locations.
- Serve food and beverages to guests.
- Manage the return of food, beverages, equipment, and utensils to the catering facility.
- Ensure proper food presentation, portion control, and maintenance of serving temperatures in compliance with HACCP standards.
- Maintain the sanitation and orderliness of all catering equipment and supplies.
- Ensure consistent food preparation by adhering to approved recipes and production standards.
Qualifications
- Must possess or be able to obtain a valid food handler’s permit and/or alcohol server’s permit where required by state law.
- A valid driver’s license may be required.
- Certain positions may require Florida Level 2 background screening.
