Job Summary
The Catering Captain is responsible for coordinating catering staff schedules to ensure all functions are delivered, served, and cleared in a timely manner. Working under the supervision of the Catering Director, the successful candidate will prepare and serve food at scheduled functions and may be required to operate a company vehicle to deliver food and beverages to event sites.
Key Responsibilities

Determine workload requirements based on catering orders.

Coordinate with function group leaders to discuss setup arrangements, address changes, and resolve operational issues.

Interact with customers to provide excellent service and resolve complaints.

Demonstrate comprehensive knowledge of all menu items.

Provide clear work instructions and expectations to catering staff.

Assist in room setups according to client specifications.

Assemble and transport food and supplies to scheduled locations.

Serve food and beverages to guests.

Manage the return of food, beverages, equipment, and utensils to the catering facility.

Ensure proper food presentation, portion control, and maintenance of serving temperatures in compliance with HACCP standards.

Maintain the sanitation and orderliness of all catering equipment and supplies.

Ensure consistent food preparation by adhering to approved recipes and production standards.
Qualifications

Must possess or be able to obtain a valid food handler’s permit and/or alcohol server’s permit where required by state law.

A valid driver’s license may be required.

Certain positions may require Florida Level 2 background screening.
